Day 10: Turkey Cheeseburgers with Chipotle Mayonnaise

Just because you are eating healthy does not mean that there is no room to treat yourself every now and then. So today I found a recipe that, whilst healthy for what it is, can be seen as a real treat. Through the use of a George Forman Grill and turkey mince to reduce the fat we can enjoy a good old-fashioned cheeseburger where the chips have been replaced with salad. It’s a considerable pity that french fries can not be considered healthy by any stretch of the imagination but I guess that’s a casualty of reducing the calories. This is especially so when you look at how many can be found in the bread roll…

Also being made alongside this is Chipotle mayonnaise. Is it bad that the reason I looked Chipotle up was because of that ‘Dead Celebrities’ episode of South Park where it was meant to make you bleed… down there? I love making low-fat sauces anyway so it seemed like a good time to kill two birds with one stone.

Ingredients (serves 4):

For the burgers:

  • 1 lb (464g) turkey mince
  • 1 tbsp shallot, finely chopped
  • 1 tbsp spring onions, finely chopped
  • 1 garlic clove, minced
  • 1 egg, beaten with a fork
  • 2 tsp Worcestershire sauce
  • 1 tsp dried tarragon
  • 1 tsp salt
  • 1/2 tsp pepper
  • 4 buns, if possible get a low-calorie variety
  • 4 slices mozzarella cheese

For the mayonnaise:

  • 1.5 tsp chipotle paste, available in world-food stores
  • 3 tbsp low-fat mayonnaise
  • 3 tbsp ketchup
  • 2 tsp Dijon mustard

Firstly combine the mayonnaise ingredients until smooth and well mixed, stick in the fridge and keep in there until you need it.

Then combine the turkey, shallot, spring onions, garlic, egg, Worcestershire sauce, tarragon, salt and pepper in a bowl and mix well. Don’t be afraid to get well and truly stuck in and mix with your hands, that way you can truly be sure that the ingredients are properly mixed together. Then form 4 burger patties from the mix.

Preheat a George Forman grill (you can use a regular grill) and then add the burgers and grill until they browned and cooked well through. Then put the burgers in the buns with a slice of cheese, some of the mozzarella and any sort fo garnish you want (my personal preference being pickles and tomatoes)

Verdict: There are pluses and minuses about today’s food so first let’s get rid of the negatives. The Chipotle Mayonnaise really wasn’t good, there were far too many contradictory flavours acting here so it actually tasted slightly off. The fact that you’re meant to add tofu to the sauce as well completely boggles the mind as it would make it even more unpalatable. On it’s own though the chipotle paste is really good so am definately going to have to find a decent use for it.

The turkey burgers, on the other hand, were lovely and surprisingly flavourful. The addition of mozzarella to them (as well as the tomatoes and pickles) made this absolutely delicious and  I look forward to heating up the leftovers  for breakfast and lunch (don’t judge me!) tomorrow.
